Nothing like a perfect chicken salad sandwich for a killer late lunch. The simple touch of adding smoked paprika and adding honey mustard to my mayo made this delicious chicken salad sandwich a “Complete” winner
2 cup shredded Rotisserie chicken
1/4 cup Mayo
3 tablespoons Honey mustard
4 celery stalks chopped with leaf tops
2 teaspoons Smoked paprika
1 teaspoon garlic powder
1 teaspoon onion powder
In a bowl, shred chicken ( white and dark meat) add Mayo and Honey mustard, all above spices, chopped celery , salt and pepper, mix and combine. Toast your bread of choice add Chicken salad and simply enjoy.
Note: instead of using a rotisserie chicken as your base chicken for this recipe, you can also boil 2 large bone less chicken breasts for an all white meat chicken salad or if you like both Dark and and white use and boil 3 large bone in chicken breast. Boil, cool, remove outer skin and shred with a fork.
