Sweet and Tangy  BBQ shaved pork with melted Cheddar.

This was yummy!! I love me some good BBQ recipes and this one is perfect on the days where it’s pouring outside and there is no sort of Barbecuing in sight. I had found some shaved pork at my grocery store yesterday and thought that this would be the perfect use for it. Sweet, tangy and a little bit spicy.

3/4 lb shaved pork

1 1/2 cup organic ketchup

2 tablespoons Spicy brown mustard

3 garlic cloves grated

1/2 cup brown sugar

2 tablespoons Worcestershire

3 tablespoons Champange wine vinegar( I use Colavita)

1 small onion grated for juice

3 tablespoons hot sauce

Salt and pepper

Olive oil

4 sesame seeded buns

Shredded cheddar cheese

In medium pan on med heat,  add all above ingredients and whisk till combine. Bring to a boil and reduce heat to medium. Let simmer for about 12 mins to thicken.

While BBQ sauce is simmering, grab a skillet and heat on med high. Add a drizzle of olive oil, pork and salt and pepper. Cook till pork is brown and crispy.

Once sauce has thickened, add pork  and combine. Place bottoms and tops of sandwich buns on a baking sheet. Add about 1/4 of BBQ pork mix to each bottom and add some shredded cheddar on top. Place under broiler for 4-5 till cheese has melted. Remove, add tops and serve.

Cooking time: approx 5 mins

Serves 4 peeps
