I was planning on just making a simple and basic “Chicken” Noodle soup this afternoon. I have had a sore throat and am feeling like I’m coming down with something. Why not add some spicy Italian sausage and the extra flavor of the garlic egg noodles ?? Super!! A little spicy with tons of really great FLAVORS running through this.
1 lb Wild garlic egg noodles ( you can use whatever egg noodles or even elbow pasta if you can’t find the wild garlic)
3 hot Italian sausage links sliced
4 boneless chicken tenders sliced into chunks
3 carrots peeled and sliced or chopped
3 celery stalks sliced or chopped
1 onion chopped
2 cloves garlic chopped or grated
1 box low sodium chicken stock
1 teas dry thyme
2 drizzles olive oil
Salt and pepper
In a large pot, heat olive oil over med high heat. Add garlic, onion, carrot and celery, dry thyme, a tiny bit of salt and tons of pepper. Cook veggies till softened ( about 8 mins). Add chicken and sausage and stir. Next add the entire box of chicken stock. Stir and reduce heat to med. Let simmer for about 10 to 12 mins. Next add egg noodles and cook till noodles have softened. Turn heat off, add parsley, stir and serve. Check for seasoning.
Note: there are so many different variations you can do for this super simple soup. Try adding Gluten free noodles and GF stocks for a wonderful GF meal or by adding Kale, Swiss chard,eggplant, zucchini and eliminating the chicken and sausage for a great vegetarian meal. 👍
