Arugula and Cucumber salad topped with strawberries, raspberries in a plum balsamic vinaigrette



Well this was such a beautiful and light lunch. Reminds me of a beautiful spring day in which I really,REALLY hope returns a lot faster than what the damn groundhog predicted?? After all this snow and fatty foods eaten from lack of sun light and leaving the house, this was a perfect start. Really pretty huh??

1 bundle fresh arugula chopped
2 cucumbers sliced
2 cups strawberries sliced in half
1 cup raspberries
1 cup carrot peels
1/4 cup shaved parm
4 drizzles of olive oil about 1/4 cup
2 tablespoon plum preserves
2 teaspoon balsamic vinegar
1/2 lemon squeezed
Dash of salt and pepper

In a large bowl, add chopped arugula, cucumber, halved strawberries, raspberries, carrot peels and toss.

Next in a small bowl, drizzle olive oil and balsamic, add plum preserves, and whisk till combined. Next squeeze half of lemon inside your bowl( cut side up when squeezing) and a little salt and pepper and whisk. Drizzle vinaigrette over you salad and toss. Shave some parmigiano cheese or asiago on to the top of your salad and serve.

Note: add some grilled chicken, steak or tuna for even more FLAVOR.
