Smoked Paprika and Creamy Mascarpone mashed Shepard’s pie.


So simple yet so darn good!! This was a “staple” that my mom would always make for my “Irish” father!! So quick and really comforting right down to your toes!! Nothing says a awesome “Meat and Potatoes” dish like this one.. I believe that this was traditionally made with Lamb but, I could be wrong.. Me, I just use the ground beef. Can never go wrong with beef!! Right?? 😃 ohh yeah I had forgotten to mention that this dish is COMPLETELY “Gluten Free”!! Double BONUS!!

1 1/2 lbs 85% ground beef ( or lamb)
1 lb baby white potatoes peeled and diced into cubes
6 oz Mascarpone cheese( Italian cream cheese, if you can’t find it just used a regular style cream cheese)
1/2 bag frozen corn
1/2 bag frozen peas
2 cloves garlic chopped
1 med onion chopped
2 tablespoons smoked paprika
3 tablespoons butter ( yup that RIGHT)
2-3 tablespoons of milk of cream
Olive oil
Salt and pepper

In a med sized pot, fill with cold water. Add peeled and diced potatoes. Bring to boil and keep boiling for 15 mins till potatoes are tender. Once tender remove drain and add back to the pot. Next add butter, salt and pepper milk or cream just to get it going and mash ( if you like a creamy style mashed just used a standard hand mixer instead of mashing) next add your mascarpone and mix well. Test for seasoning and set aside.
Now, grab a large skillet and add olive oil, chopped garlic and onion. Cook for about 2 mins just till onion becomes translucent and tender, now add your beef and a little bit of salt and pepper( you can add more seasoning once beef is cooked if not enough was added previously) just season till you own liken. Brown Beef for about 5 to 6 mins and remove from heat.


Use about a 4-6 qt baker for this.
First you are going to add all of your beef first to the bottom of your baker. Next layer on peas and then corn. Lastly for the top, slather on all those AWESOME creamy mashed taters and smooth. Place in a 350 degree preheat oven for about 25 to 30 mins till just the very top of your potatoes are a slight golden brown on the edges. Once this happens, remove from oven sprinkle so dry parsley and serve it UP!!
Soooo good.

Cooking time: approx 25-30 mins
