Raspberry and Blackberry Gazpacho with a Lemon Whip cream.


Dessert?? Soup?? Who cares!! This recipe is so great that it can used for either or. A wonderful Kid friendly recipe as well. Sure to please
Everyone that you serve it too. Creamy and sweet with a hint of tartness. Yum-O..

1 cup Fresh Raspberries
1 cup Fresh Blackberries
1/2 cup white granulated sugar
2 tablespoons sugar for whipping cream
1 cup fat free heavy cream
1 qt. whipping cream
1 lemon cut in half ( half for whip cream and half for zesting garnish
Mint leaves and extra berries for garnish

Whipping cream:
In a large bowl, pour in whipping cream and add 2 tablespoons of sugar and lemon juice( one half of cut lemon squeezed). With a standard hand mixer, beat till mixture forms stiff peaks ( about 3 mins) remove and set aside.

In a food processor add both berries and sugar and pulse to combine. Next stream in your heavy cream and purรฉe till thick and creamy. Remove and pour mixture into small bowls or ramekins. Add a dollop of whip cream, mint leave, lemon zest and extra berries and serve.

Serves 4 peeps
