Prosciutto and Egg “Fried Dough” Sammie with Melted Provolone.

When I was younger and living with my grandmother, once in a great while I would wake up too this deliciously smelling beauty. Well, not the exact same one but, pretty close. She sued to make a really “hearty” delicious breakfast of Fried dough and eggs. Gooey broken yolk fried egg with a beautiful piece of fried dough. Now, this is NOT the healthiest of breakfast’s but, for me reminds me of my Nana and all the awesome food she would always make while I was with her. This is sort of my knock off of her fried dough and eggs just made I to a wonderful breakfast sandwich.. Fried dough, fried egg, crispy prosciutto and melted provolone. Simple as that.

1 bag store bought pizza crust.
6 eggs
18 pieces of thinly sliced deli prosciutto
6 pieces sliced provolone
Veg oil for frying
Dry parsley for garnish
Black pepper

In a large frying pan, pour in oil about mid way up the pan. Heat oil on med high. Once oil is heated and ready for frying( about 2 to 3 mins) cut your dough into 12 pieces and start pulling your dough outward to make a round sort of shape. Place dough in hot oil 3 pieces at a time and fry on each side till golden brown(about 1 min each side). Remove each piece and lay on a paper towel covered plate to drain some of the excess grease off the dough. Place 6 of the cooked fried dough pieces on a platter and set aside the remaining 6 pieces to top your Sammies. Set aside.
While dough is cooking, grab a cookie sheet and lay each piece of prosciutto on the sheet. Place in a 350 degree oven for 6 mins just to get prosciutto crispy. Once crispy, remove from oven and place 3 pieces of prosciutto on top of each fried dough piece( the bottom fried dough parts) then add your provolone on top of prosciutto. Set aside.
Next in the same pan you cooked your dough in, break eggs ( fry 3 eggs at a time) in your pan and fry for about 2 mins. ( do NOT flip the eggs) place each egg on top of provolone. Poke a knife or fork in the middle of egg just to break the yolk and add some freshly ground pepper to your eggs. Add the top fried dough pieces to your

Sammie’s and serve. Sprinkle some dry parsley on top for garnish.

Cooking time: approx 15 mins

Serves 6 peeps
