Cheddar stuffed baked potatoes wrapped in prosciutto

Sometimes I think the food I make is just “SOMETIMES” way too cute too eat? Only sometimes!! These are just so cute I just wanted to stuff them with some gooey love ( cheddar) and wrap them in a nice tight little blanket ( Prosciutto) hehe. Occasionally I go a little GA GA over food so don’t mind the excess drool all over the iPhone as I type.. 😋

1 lb Idaho little spuds( small size potatoes about 12 in a bag)
2 cups shredded cheddar cheese (or use any kind of cheese you like)
24 slices of prosciutto( 2 for each potato)
Chopped green onion for garnish
Salt pepper

Preheat oven at 375

Lay potatoes on a baking sheet, poking small holes in each one. Bake for 45 mins till potatoes have softened and skin is crispy. Once potatoes have softened, remove from your oven and wrap each potato with 2 slices of prosciutto cross crossing each slice. Slit a small slice in each potato and then push each end of the potatoes inwards to open up. Sprinkle a little salt and pepper on each potato. Next, Fill each slit with some shredded cheddar cheese making sure to fill then all the way to the very top ( you might have to kind of squish it all in there) Bake for an additional 8 to 10 mins till cheese has melted. Remove from your oven and place them on a serving platter or large plate. Garnish with chopped green onion and serve.

Cooking time: approx 1 hr

Serves about 3 to 4 peeps
